Chicken Curry

INGREDIENTS:

  10 servings 20 servings 50 servings
  1 lb chicken, diced 2 lbs 5 lbs
  1 10 oz. pkg spinach 2 10 oz pkgs 5 10 oz pkgs
  2 medium onions, diced 4 onions 10 onions
  1/4 c curry powder 1/2 c 1 1/4 c
  1 tsp ginger 2 tsp 5 tsp
  1/2 tsp cumin 1 tsp 2 1/2 tsp
  1 can coconut milk 2 cans 5 cans
  2 Tbsp vegetable oil 4 Tbsp 10 Tbsp
  1/4 c raisins 1/2 c 1 1/4 c
  1/4 c peanuts 1/2 c 1 1/4 c
  2 c uncooked rice 4 c 10 c
  10 pita breads 20 pita breads 50 pita breads

DIRECTIONS:

  1. Heat oil, add spices and cook for a minute, but do not burn
  2. Add onions and cook for a few minutes
  3. Add chicken and cook through
  4. Add spinach and coconut milk
  5. Add raisins and nuts 10 minutes before serving. Serve with rice or bread.
